Everyone likes chocolate chip cookies (some a tad more passionately than others), and this slightly modified recipe from Nigella Lawson’s Kitchen is a sure winner.
150g soft butter
125g soft light brown sugar
100g caster sugar
2 tsp vanilla extract
1 whole egg, plus extra egg yolk
½ tsp baking soda
200g chocolate chips
100g macadamia halves
Melt butter in microwave, and leave to cool. Add melted butter to white and brown sugar, and beat until well blended.
Add in vanilla, whole egg and egg yolk until light and creamy.
Sift flour and baking soda, then add to mixture in batches. Fold in chocolate chips and macadamia.
Drop balls of cookie dough onto baking sheet, and bake at 170C for ~20 minutes (depends on size on cookie dough balls) until lightly browned. Cool for 5 minutes, then transfer to wire rack.
